🥚Custard Recipe

Ingredients

  • 3 egg yolks

  • 50g white granulated sugar

  • 25g corn starch

  • 300ml whole milk

  • Splash of vanilla

  • 30g butter (you will melt it on a stove)



Combine 3 egg yolks and 50g white granulated sugar in a bowl.



In a pan or pot, put 300ml whole milk and 30g butter in and melt it over medium heat.



Add a little of the milk and butter mixture into the yolk and sugar mixture to temper the yolk sugar mixture. This is important so you don’t combine both together and then accidentally cook the yolks!



Add 25g corn starch into this tempered mixture. Make sure it dissolves.



Add this tempered mixture with corn starch back into the pot that you have the rest of the milk butter mixture. You can pass it through a sieve to make sure it is super smooth but I’m lazy so I don’t do it.



Cook over low heat and mix constantly until it thickens. It’ll take a couple minutes.





Take the custard off the stove and pour into a little bowl. Add in a splash of vanilla and mix in.



Take some plastic wrap and cover it, making sure it touches the entire surface of the custard. This is important so that the custard doesn’t get a skin and dry out! Put it in the fridge to cool.
